Pork Rack with Jam Glazing


  • Pork Rack (can be any size)
  • Salt
  • olive oil
  • Jam (I use figjam)


  1. Preheat oven to 180 degrees Fahrenheit.
  2. Score the pork rack skin with cuts halfway into the fat thicknes.
  3. Rinse skin with boiled water and pat dry with paper towel.
  4. Pour olive or vegetable oil over the skin, enough to cover but not excessive.
  5. Rub sea salt into the skin until you can feel the  salt graininess.
  6. Cover the bone ends with foil.
  7. Place on metal rack in a tray.
  8. Cook for 45 mins for every 500g.
  9. When the last 20 minutes of cooking is due, remove from the oven
  10. and cover the crackle with fig jam ( or any jam you love!).
  11. Remove the foil from the bones.
  12. Put pork rack back on tray and back in the oven for the last 20 minutes
  13. Serve with apricots and salad or vegetables!
